Blueberry Pancakes

Ingredients

125g self raising flour
1 teaspoon baking powder
1 tablespoon caster sugar or 1 tablespoon of honey
1 egg
150 ml milk mixed with 1 tablespoon of natural yoghurt
100g of blueberries
tiny pinch of salt

Method

  1. sift flour and baking powder into bowl, add salt
  2. add sugar (or honey)
  3. make a well in the centre of the flour and add the egg
  4. beat in the milk and yoghurt mixture to make a thick batter
  5. fold in blueberries and allow to stand for 10 minutes in the fridge
  6. heat a frying pan on the hob, grease with a little oil. Dollop the mixture into the pan – you’ll probably be able to fit two or three pancakes in the pan at once. Wait for the bubbles in the pancake batter to rise to surface before flipping over to cook on the other side.
  7. serve with crème fraiche
