Lemon Balm - Melissa officinalis
A vigorous bushy perennial that will grow in most conditions. The fresh leaves add a citrus flavour to salads, soups, poultry and fish dishes, desserts and cordials. Stuffing the cavity of a chicken with a handful of lemon balm leaves before roasting will keep the flesh moist and impart a subtle flavour.
HP- 30-80cm/12-32in. The easiest method of propagation is by division in spring.
Harvest the tips of the stalks to encourage bushy growth and snip off flower heads to prevent self-seeding.
May need dividing after three years.
